Air Fryer Cheeseburger Egg Rolls

1 lb lean ground beef or ground turkey
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup finely chopped onion
1/3 cup finely chopped dill pickles
1/3 cup ketchup
2 teaspoons yellow mustard
1 cup shredded cheddar cheese
12 egg roll wrappers
Olive oil spray or cooking spray for air fryer

Optional:


Burger sauce or ranch for dipping
Lettuce, shredded (for fresh serving contrast)
Chopped tomatoes or jalapeños for heat


Instructions

Step 1: Cook the filling
In a skillet over medium heat, cook the ground beef or turkey until browned and fully cooked through, breaking it apart with a spatula as it cooks. Drain any excess grease if needed. Add in the chopped onion, garlic powder, onion powder, salt, and pepper. Cook for another 2 minutes until onions are soft.

Step 2: Add burger flavor
Stir in the chopped pickles, ketchup, and mustard. Mix everything together until well combined. Let the mixture cook for 1 more minute, then remove from heat and let cool slightly. Stir in shredded cheddar cheese while the filling is still warm, so it gets melty and evenly distributed.

Step 3: Prepare the wrappers
Lay out an egg roll wrapper on a clean surface with one corner facing you (like a diamond). Place about 2 tablespoons of the filling in the center. Fold the bottom corner up over the filling, then fold in the sides, and roll up tightly. Dab a little water along the top corner edge to seal the roll closed. Repeat with all wrappers.

Step 4: Air fry
Preheat your air fryer to 375°F for 2–3 minutes. Lightly spray the basket with cooking spray. Place egg rolls in a single layer, seam-side down, with space between each one. Spray the tops lightly with cooking spray. Air fry for 8–10 minutes, flipping halfway through, until golden brown and crisp.

Step 5: Serve hot
Remove from the air fryer and let cool for 2–3 minutes (they’ll be piping hot inside). Serve with dipping sauces of your choice — burger sauce, ranch, spicy mayo, or mustard. Add a sprinkle of chopped parsley or sesame seeds if you want to get fancy.
