Instructions
Creating Bacon Egg & Cheese Breakfast Quesadillas is a straightforward process when you follow these simple steps:
1. Cook the Bacon: In a large skillet over medium heat, cook the bacon strips until crispy. Remove them from the pan and place them on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces.
2. Scramble the Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and pepper. In the same skillet, remove excess bacon grease, leaving about a tablespoon. Pour the egg mixture into the skillet and scramble until fully cooked. Remove from heat.
3. Assemble the Quesadillas: Lay out two tortillas on a clean surface. Divide the scrambled eggs evenly between the tortillas. Sprinkle the crumbled bacon over the eggs, followed by the shredded cheddar cheese. Top each with another tortilla.
4. Cook the Quesadillas: In the same skillet, add a small amount of cooking spray or butter over medium heat. Carefully place a quesadilla in the skillet and cook for about 3-4 minutes on one side until golden brown. Flip and cook the other side for an additional 3-4 minutes, or until the cheese is melted and the tortilla is crispy.
5. Repeat: Remove the cooked quesadilla from the skillet and repeat the process with the second quesadilla.
6. Slice and Serve: Once both quesadillas are cooked, slice them into wedges and serve hot, optionally garnished with chopped green onions or salsa.
