Bunny Cookies

  • Author: Isabel
  • Total Time: 1 hour
  • Yield: About 24 bunny-shaped cookies 1x

Ingredients

Scale

For the Sugar Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

For the Royal Icing (Optional for Decorating)

  • 2 cups powdered sugar
  • 2 tablespoons meringue powder
  • 4 tablespoons warm water (adjust for consistency)
  • Pink food coloring (for bunny ears)

Additional Decoration Ideas

  • White sprinkles or sanding sugar
  • Mini chocolate chips (for eyes)
  • Edible pearls or candy beads
  • Shredded coconut (for a “furry” bunny look)

Instructions

Step 1: Prepare the Cookie Dough

In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add the egg and vanilla extract, mixing until fully incorporated.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Step 2: Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Chilling helps the dough firm up, making it easier to roll out and cut into shapes.

Step 3: Roll and Cut Out Bunny Shapes

Preheat your oven to 350°F (175°C). Lightly flour a clean surface and roll out the dough to about ¼-inch thickness. Use a bunny-shaped cookie cutter to cut out cookies, then transfer them to a parchment-lined baking sheet.

Step 4: Bake the Cookies

Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 5: Prepare the Icing (If Decorating)

While the cookies cool, make the royal icing by whisking together the powdered sugar, meringue powder, and warm water until smooth. Adjust the consistency as needed—add more water for a thinner glaze or more powdered sugar for a thicker consistency.

Step 6: Decorate the Bunny Cookies

Use a piping bag or spoon to spread white icing over each cookie. Add pink food coloring to a small portion of the icing and use it to create bunny ears. Decorate with chocolate chips for eyes or edible pearls for extra detail. Let the icing set before serving or packaging.
